Domestic Nirvana - Pumpkin Sheet Cake



I was happy as a lark yesterday.
It was the boy child's day to come over and spend the night.
I made him take photos for me.
I did not once mention homework.
Not once.

I decided to do all my house chores yesterday, so I could have the next couple of days free.
With order restored in the abode, I pulled out one of my favorite pumpkin recipes.

Behold the Pumpkin Sheet Cake.



It's a humble little recipe, it 'tis - but it delivers.
It delivers moist, pumpkin, cream cheese goodness right up in yo mouth.
Tis the season, ya'll.

I shan't forget the feeling - yesterday - a feeilng of domestic nirvana.
Clean house - smelling of pumpkin and spices.
Frosting that cooled cake - swirling the cream cheese frosting artistically about.
The only thing that soiled the image was that I was not properly dressed.  I was still in me pajamas, and my pendulous German landlady breasts were a bit too free for my liking. Had I been dressed in an apron - well - images like that are too good to be true.

Can you imagine life without cream cheese?
Nor I.
Wouldn't want to.
In fact - I'm so enamored at the moment with the thought of cream cheese - I just wrote this:

oh dear cream cheese -
so white and heavy -
sounds like me -
but it's thee -

my dear dear sweet cream cheese!

Ok, I know it's lame - but ya gotta feel the love - don't ya?

Upon bringing this cake to a big chili cookout one day way back when - a chef - a real live chef that catered Cindy Crawford's wedding of all things - asks 'who made the pumpkin sheet cake?'
I shyly replied 'why I did sir'
'It's delicious' he responded whilst licking the dear sweet cream cheese off his lips.

Now, if that ain't reason enough to be up in the kitchen making this cake - I really don't know what is.

Amen.


Pumpkin Sheet Cake with Dear Sweet Cream Cheese Frosting

4 eggs
1 2/3 cup of sugar
1 cup vegetable oil
1 15oz. can of pumpkin
2 cups flour
2 t ground cinnamon
2 t baking powder
1 t baking soda
1 t salt

In mixing bowl, beat eggs, sugar, oil and pumpkin.
Combine dry ingredients and gradually add to pumpkin mixture, mxing well.
Pour into an ungreased jelly roll pan (15x10x1).
Bake for 25-30 minutes at 350 degrees.
Cool in pan on wire rack.

Frost with this:

3/4 cups of butter, softened
6 oz. dear sweet cream cheese, softened
1 t vanilla extract
3 cups powdered sugar

In mixing bowl, beat butter, cream cheese and vanilla until smooth.
Gradually beat in sugar. 
Store frosted cake in fridge.

    I read yesterdays post and the answer to my question I posted for you. I would love to meet one day real soon can't wait. Also no I was not the pumpking asking lady that showed up at your door. Also did not see the yellow chair but did notice grapevine. I have loved your house for a while even before I first read your blog. So you name a day and we definately need to get together.

  6. I love pumpkin and I love cake and I love cream cheese! Sadly I have been eating too much cake lately. For some reason I can't have a cake in my kitchen and not eat it. I am going to print it and keep it in my file for another time maybe after I start running again.
    You and your German landlady breasts are just to darn funny. I spit my coffee out when I read that!

  7. after readin' that, i will be headin' to the store for some cream cheese. that sounds wonderful. will be puttin' up some pumpkin for the winter months ahead -- still waitin' for the vines to die off. it won't be long now.

    enjoyin' this indiana fall weather and waitin' patiently(?) for the colors to pop. :)

  14. Yum! I've made some pumpkin bars with cream cheese frosting. They're made in a jelly roll pan. this sounds very similar. LOVE cream cheese frosting!!

  17. everyone's talking about cake and your breasts and your cream cheese poetry, but alls I can think about is how I have domestic chores to do. I wish you lived closer because I need someone to motivate me. The thing is, the second I clean something, someone does something to destroy my handiwork, and I am defeated. I need encouragement in the face of dirty misplaced socks and "who left that sippy cup there?"
    I have a feeling I would get some encouragement from a lady who loves cream cheese and talks about her chest in a grandfather clock sorta way.

  19. I know what you mean about loving the house when it smells of pumpkin and spice.... the very thought is making my mouth water. Years ago, when I was a young college girl, I went to stay with some church friends for Thanksgiving break (because my family lived clear across the country.) The dear sweet lady decided that before I could return to school, she needed to teach me to bake all her favorite holiday cookies. So we were in the kitchen baking goodies until all hours of the night. One of my favorites were the cream cheese frosted pumpkin bars and oh were they ever good!! I think her recipe is similar to yours.
    Aaron is a lucky boy to have someone who loves him so much and always bakes him special treats!!

  20. I am so envious. You tease. I'm never w/out cream cheese but am trying to stay gluten free so will have to work w/that nummy recipe. Love Aaron's pretty teeth as my girl child's teacher called me today to say child had pitched fit at flouride time (swishing for kids on well water). And I have no German lady breasts. Prolly TMI, but I call mine little goat sacks. I bundle 'em only to fluff the sweater! And chores ALL DONE?! Impossible. I no sooner vac one level than it looks like a herd came through while I did the next. Yikes, you'll never visit our hillbilly haven now, will you? Oh well, if you do, BRING CAKE!

  23. This sounds wonderful. I'll have to copy it for a future gathering. Maybe Thanksgiving. I actually just found a recipe for pumpkin cupcakes with cream cheese frosting for my daughters 30th birthday. I would make this cake but I am also making some yellow cupcakes with chocolate frosting her other favorite. I forgot to tell you earlier this week that I made the mac and cheese recipe you posted. Hubs was very happy...as well as some of our grand children and a niece and nephew. This will be the 3rd weekend in a row that we have had company. I have been a cooking fool.

  33. I love Fall because of pumpkin recipes! I have one for pumpkin cobbler I will share soon.
    Truth be known I make pumpkin pie all year round for my husband and one son who is 15, they can eat a whole pie in 2 days.

  36. Ummmm. I love pumpkin cake. Your recipe sounds a lot like mine. I make mine as a bundt, then serve it with homemade caramel sauce instead of cream cheese frosting. Bet yours is delish.

    I have heard the best things about you from a certain Farmgirl who dwells near a Flower Patch. And who she loves...well, I know I'm gonna love! I have laughed HARD at some of your comments on her blog, so I stopped by your blog one night, and laughed and drooled in equal parts! This recipe sounded so GOOD, I jotted it down, and tonight I made it for a event where people cut small pieces of it at first, then much more generous pieces after that. I'm lucky they left me some to enjoy for breakfast in the morning. Thank you for sharing this gem!
