Fresh Strawberry Pecan Bread


I love baking.  I do.  It makes me happy.

I'm not entirely sure why, but it could have something to do with using my mom's old spoons and bowls, or baking breads in my aunt's old bread pans.

When I bake - I feel this connection to my family in a way that warms my heart as much as the oven warms the kitchen.

I feel connected - I feel that I'm showing love in some way.
Doesn't seem right for the ManChild (formerly known as the BoyChild) to come for a visit and not find some fresh baked goodness going on.

I don't cotton to sending Glenco out among the English for the day without a little cookie or something in his lunch.

That's how I roll.
And - that's how I got so many rolls.

Selah.

I adore quick breads.
There's something so homey about them, and well - they are quick.
The variations are endless - and when Aldi had strawberries on sale for 99 cents a box -
I went a bit nuts.


I ate four boxes m'self the first week.

Then I got four more.
Um, and four more.

Needing to bake (yes, I needed to) yesterday, I thought...well, now if there can be banana bread, and pumpkin bread and the likes, then surely, there could be some strawberry bread makin' up in here.

Enter
Google.

I found  this  recipe on Allrecipes, and tweaked it around.

Use FOUR cups of strawberries, and ONE teaspoon of cinnamon.
Slice some of the strawberries, and halve some.
If you have strawberry extract around, I'd splash some in there.

I do think it's very good - BUT - I'm dreaming of a poundcake like strawberry bread, perhaps with a tad of heavenly cream cheese mixed in it somehow with more of a strawberry taste.
I'll keep playing.

This bread is definitely worth a go - especially with our beloved strawberry season upon us.

  4. I have never even heard of strawberry extract. Shows you how much of a baker I am. Actually I baked a lot when I had kids at home. I adore strawberries. I eat them twice each day. Once on my cereal with blueberries in the morning. And then in my protein shake for supper with a banana and blueberries.

  5. I wonder if you froze the cream cheese, then chopped into chunks and folded into the batter at the last step? Gosh that sounds DIVINE! *making note of recipe to try once I get my hands on some ripe strawberries*

  9. My friend just gave me the same recipe. She said to use 4 cups of strawberries too. Slice 2 cups and smoosh 2 cups!

  11. Yeah, I went kind of crazy when ALDI's had strawberries for $0.99 a package too:)

  12. I love strawberry shortcake with real whipped cream and sweet short bread. Your bread recipe looks very good too. Very nice blog design! I've got an itch to change mine around, but chicken out. Ha! Maybe I'll change the colors?

  14. NUM...Num...Num...And I'm wondering if you could substite rhubarb for those strawberries in that recipe. Those strawberries look like they came out of the garden, not from some hydroponic greenhouse environment.

  16. You know, when I saw the smaller version of your bread in the previous posting, I thought that you had switched from bringing chickens in the house to bringing bunnies in the house. But with the larger pic on today's post, I can see it must be a cookie jar (?). Now I'm laughing at myself :)

  18. I love reading your blog. Thank you for your words. I love the stories, I so want to have chickens..... and bees.....I had bees years ago but gave them up for my subdivision. Now I don't want to care about the subdivision and do it anyway. Keep the words coming.

    It is a rainy afternoon here in Central Maine-a good day to stay inside and bake. I saw the link to the recipe for the Strawberry Bread and decided to give it a try. I didn't have any white flour-so I used whole wheat. I didn't have pecans-but I did have almond meal. I added a couple of dashes of Allspice to complement the Cinnamon. I followed your hints and the bread is WONDERFUL. OH YUM. I was going to share the second loaf with some neighbors but my husband has declared we are not to share and it is all for us. It is that good! : )
