That Fabulous Cheesy Potato Soup


Gotta give credit, where credit is due, and this recipe is from the deliciously delightful
'FarmChicks in the Kitchen' Cookbook.
A delight for the eyes as well as the tastebuds!



Just be prepared to fall over when you eat this soup, so I do suggest you seat yourself first.

Without further adieu....the recipe...

But seriously...

My eyes rolled back up in m' head, and I imagined a river of this soup, and I, in my canoe of bacon forging it. It really don't get no betta.

I've made this soup with russets (which the recipe calls for), and red potatoes, and I like it equally.

Ok, seriously now...the recipe...

But one quick thing first....don't even try to make it with skim milk. I mean seriously...butter, cheese, don't skimp on the milk....use whole.


1/2 stick of butter
1 cup diced carrots (1/4" dice)
4 cups chicken broth
5 cups peeled, diced russet potatoes
1 teaspoon dried basil
1/4 t salt
1/8 t black pepper
1 1/2 cup milk
1/4 cup flour
8 oz. sharp cheddar cheese, grated (2 cups)

Make the soup:
Melt 1 T of the butter in a large stockpot over medium-high heat. Add the carrots and saute until softened - 3 to 4 minutes. Add the broth, potatoes, basil, salt and pepper. Bring to a boil; lower the heat and simmer until the potatoes are tender - about 20 minutes.

Make the cheese sauce:
Meanwhile, melt the remaining 3 T butter in a saucepan over medium high heat. Stir in the flour and cook for 1 minute. Slowly whisk in the milk and cook until thickened 0 2 minutes. Add the cheese and stir until melted and thoroughly combined. Gradually pour the sauce into the soup and stir until thoroughly blended.
Bliss.

Dental update:
Saw Dr. Dimples today. He and his staff are such a joy. Truly, if you need a dentist in NW Indiana...please check out Dr. Louis Sertich.

He seemed concerned that I still had a sore lump in my gums after a two weeks of antibiotics. One more week of antibiotics, and another visit, and if it's not better then, I need more drilling. It's all good. I'm not in serious pain anymore, in fact, I'm feeling like myself again.

    Next - I have that book! And I haven't made a single recipe from it. I love reading cookbooks so much that I sometimes forget that there is a greater purpose behind simply reading them...

  2. SO glad you're feeling better Jayme! I've been thinking about you today and wondering how you were holding up. I've had run around busy week this week too and I have to say, I've not enjoyed it. I've gotten used to my routine and sticking close to home and I really like it. I'm afraid I have to go out again tomorrow and hunt for a coffee table but I might talk myself out of it.

    That soup sounds wonderful. I have the book and it is even one of the few I kept unpacked so I will try it. Really, I can't use light butter, light cheese and skim milk? Would you stop being friends with me?

  4. Hmmm, I was thinking of making a creamy wild rice soup this weekend. I wonder if I 86 the carrots, add some tarragon, cut the tators in half and omit the cheese.. well hell, there goes the recipe then.

    But a creamy wild rice soups.. hmmm, yummers, with fluffy biscuits steaming hot dripping with honey. Ye'all come on down this weekend for a visit.

  5. Thanks for the recipe, Jayme. It is one that I'll definitely be trying soon. I'd try it tomorrow, but we had potato soup (with a new dumpling recipe) Monday evening.

    SO SO glad that you are starting to feel more like yourself again. Your dentist sounds great! Hope this round of antibiotics takes care of that nasty lump that is still hanging around!

  7. Glad you are on the mend. The soup sounds heavenly...but will have to wait until I reach my goal weight. Sigh, yeah, I know....I'm a fuddy duddy. ha.
    Believe me, I have NOT been that good, and will probably not lose any weight again this week. I MUST get back on track (thus why the soup must wait for me until a later date)...but it does look awesome.

  9. So glad to hear you are FINALLY feeling better. You've really had a long haul with that tooth! Can you imagine this in the pioneer days? I think that tooth would have had to come out!

    Oh, and I think you deserved a new computer monitor with - was it 3 trips to the dentist? At least. That is certainly worth a new monitor!

  12. Thank you for sharing that recipe. I LOVE potato soup and I'll definitely give this one a try. My grandma used to make (actually still does, she's 90) the best potato soup EVER! I've tried and tried to make it just like her's, but it never tastes the way I remember it. Good thing I'll get to eat some of her soup soon. :-)

  18. I just made potato soup this week. It is ALWAYS a hit. I got Texas toast to go with it and some croutons. This time I added a little broccoli. Thanks for a new version to use. And yes....BACON!!!!! Can't beat that. SO GLAD you are feeling better. Go seize the day, girl!

  20. I make a very similar soup but add brocoli and chunks of ham or bacon. I haven't met a kid that didn't lick the bowl.

  21. When something does not work anymore I take it to my pre-k class and let 20 four year olds take it apart! What fun it is to watch them destroy something...I even give them ziplock bags to take home "whatever they can remove" from the item!
    I am making that soup tonight, just got to make some chicken stock...I WILL NOT use that stuff out of the box. Quick way to make stock...roast chicken breast with bones/skins, while still warm pull the bones and skin off and put in a pot with onions, celery and what ever you have in the crisper, makes unbelievable stock and you have chicken cooked for that quick dinner...sorry did't mean to ramble!

  22. Your soup is really, really similar to my potato and cheese chowder, only I add sweet corn niblets.... serve with a loaf of fresh home-made bread and oh! Glory be!
