Pumpkin Cupcakes w/Cinnamon Cream Cheese Frosting

Seems like since I've been on my weight loss journey - I've barely baked a thing.
This is from the gal that had about 75lbs of flour and 10 lbs of butter in the house at any given moment.

I've pondered my lack of baking, and shrugged it off to 'it's too soon - I can't handle the temptation'.
Then I went through a spell and thought 'ohmagoodness - I never liked baking in the first place - I just liked eating it!  Baked goods are my crack, and I'm my own dealer'.

And then.
Along came the day the BoyChild was visiting.
(He's doing well, FYI - I need to get him on here again, don't I?  He's as tall as I am.)
You'd think we hadn't seen each other in years - they way we do go on when we do - I had to pull over in the car a time or two - laughing so hard I couldn't see.
We were chatting and laughing like two hummingbirds on crack.
Why yes - there ARE a lot of drug references in this post!


I wanted to make him a special treat.
I truly felt like I could make the cupcakes and they wouldn't be a problem - well - not a huge problem.

I actually really enjoyed the whole process of baking - and hearing the moans of the BoyChild, and the smile on Glenco's face.

Conclusion?

I DO like baking!
Even if I don't get to eat it.



And as silly as that sounds - it's something I've mentally wrestled with since changing my lifestyle.

I got the recipe from here -
and it's a keeper so I'm told.
(OK, I ate one! - and yes!  it's a keeper!!)
They are super quick to make since the base is a boxed cake mix.
I can hear you gasping!  YES!  I used a boxed cake mix!



The recipe follows -

I've been a bit AWOL here lately - due to working at Pier One - I'm not sure I'm going to last gals - to tell you the truth.
Well, I will if they change my schedule up somewhat.
I've been having to go in just for 2 or 3 hours every other day - and driving the Heep - it's just not worth the time and gas.
It's got me totally disjointed it has.



Pumpkin Cupcakes with Cinnamon Cream Cheese Frosting

1 box of Spice Cake Mix
1 15 oz can pumpkin
1 cup of sour cream
1/4 cup of oil
3 eggs

Mix it all up with a mixer - let it beat about two minutes to get it good and blended, and to whip some air in it.

This makes exactly 2 dozen cupcakes.
Bake at 350 for about 20 minutes - or until they spring back when you poke them.

Let them cool and frost them with this -

8 oz. softened cream cheese
1/4 cup softened butter (don't even THINK of using margarine!)
1 t. vanilla
1.5 t cinnamon
Enough powdered sugar to make a good frosting consistency - about 3 to 4 cups.

Just blend this with a mixer until it turns into frosting.
(yes, I know I give the worst cooking directions ever!
I take a lot for granted - assuming you guys know how to bake.

If you can manage not to just eat the frosting alone - frost the cupcakes.

Eat it and weep.

  3. they look absolutely yummers...I can smell the vanilla and cinnamon! I'm a recovering sugar/carbohydrate addict...I have to be very, very careful...in years past, eating just one never happened. I don't crave sugar the way I used to to...and I trust myself up to a point...however unless I'm baking to take to a Thanksgiving/Christmas dinner I don't bake. I've going to sit here and savor the photos, I might have to get out my cinnamon to help me :-)

  6. That sounds wonderful! Wonderful!!! I bake all the time now and don't eat it. I love baking. I have used this same recipe to make bars with..in one of those smallish cookie pans...and I sprinkle nutmeg on top of the frosting. LOVE this, Jayme. I am looking forward to seeing some pictures of the BIG little guy! xo Diana

  7. Those sound heavenly. I've had my new stove for a year and this is the first time I've baked....cornbread. Made a pot of pinto beans with a honey baked ham bone. You can just go in and buy the bone. Delicious. Thanks for sharing the sweet stuff. Have a great day.

  8. Those really do sound delightful, and I think using a box cake as the base is a perfect idea. I should send you my favorite spice cake recipe from an old Bon Appetite magazine that starts with a box cake. Delish! Love the recipe for the frosting...I will definitely be making these this fall. I've been meaning to congratulate you on your weight loss success...you look fabulous!

  11. Boxed mixes are a blessing. We all use them, and if someone doesn't from time to time, they are missing out, on an easy baking experience! This is proof that scratch isn't always necessary. The pictures are wonderful, I can almost smell them! Sounds just heavenly.

  16. Thought they looked pumpkin-y. I'm making a batch of pumpkin bread at the moment- to take to work for a pot luck. Frankly, I'm not excited about potlucks, we have them so often at work. But if we're going to have them anyway, I like to take something that I know what is in it!

    Okay, I will!! and I so want one of those right now. I actually have a spice cake box mix in the cabinet right now. Who know? I never have that kind of stuff in there.

  21. Loving this site, finding it hard to drag myself away from it, had to say I have never ever tried pumpkin, either as a vegetable or a pie it just doesnt look right,which is rich coming from someone who would run over you for a plate of escargo!! , but maybe I will try these muffins

  23. I am glad you are blogging because I just found you! Life itself is interesting, so enjoy not having to do back flips for anyone. You do look great! I am sure you feel better too. I've been trying to lose at least 25 pounds and I am extremely slow, but diligent. And, I also wrote down the Pumpkin Cupcake recipe, someone had made these years ago for an old office gathering and I remember it had the Spice Cake and Sour Cream in it, but could never find the exact recipe that they had nicely given to everyone...and I lost. I'm so glad you posted!
